&lt;span class="postbody"&gt;We have an electric takoyaki maker, so I am not sure how hot it is. But it should sizzle, but not too hot. &lt;span class="postbody"&gt;I made takoyaki for the 1st time and half way through I thought it was just going to become a complete disaster.
&lt;br /&gt;

&lt;br /&gt;
It ended up being not as bad as I thought it would be for my 1st time. But I don't have a normal takoyaki grill i have something similiar but it's not electric you put it on the stove and heat it up. My biggest problem was trying to cook it enough so the inside is cooked without burning the outside.
&lt;br /&gt;

&lt;br /&gt;
Anyone know how hot the thing should be for cooking takoyaki?

&lt;span class="postbody"&gt;I just tried making this sauce, I don't have any mirin so I just used 3/4 cup of sake instead of 1/2 sake and 1/4 mirin.

The sauce is pretty decent except next time I make it I intend to use a lot less garlic in it. Like probably not even half as much as the recipe says. If you love garlic though the recipe might be fine how it is.

It will take too much time to make takoyaki sauce. I think that
&lt;br /&gt;
it's better to buy it. For some good and a little bit sophiscated takoyaki,
&lt;br /&gt;
you don't need any sauce, because takoyaki's will remain crispy 
&lt;br /&gt;
without any liquid dressing. It depndeds on your taste. salt only,
&lt;br /&gt;
pepper Ichimi o shichimi only. @΅‘Ζ€ͺη΅B@In Osaka dialect,
&lt;br /&gt;
we pronounce hichimi toogarashi, but in the standard Japanese, 
&lt;br /&gt;
shichimi should be correct.  Any worster sauce will be OK. It 
&lt;br /&gt;
depends on how you cook takoyaki.

but Daikoku sauce is well-known. More or less, any sauce will be
&lt;br /&gt;
OK.

&lt;span class="postbody"&gt;I found this recipe online. I haven't tried it, but maybe you can give it a try and let us know how it compares to the sauce from the store?
&lt;br /&gt;

&lt;br /&gt;
INGREDIENTS:
&lt;br /&gt;
1 cup catsup
&lt;br /&gt;
1/2 cup worchershire
&lt;br /&gt;
1/2 cup sake
&lt;br /&gt;
2 tablespoons ginger
&lt;br /&gt;
2 tablespoons garlic
&lt;br /&gt;
1/4 cup sugar
&lt;br /&gt;
1/4 cup mirin
&lt;br /&gt;

&lt;br /&gt;
Put all above ingredients in sauce pan and bring to a boil over medium heat stirring occasionally.
&lt;br /&gt;
Reduce to a simmer for 25-30 minutes skimming any foam that rises to the top. Will keep refrigerated for 4
&lt;br /&gt;
weeks.
